Reflecting on a Week of Vegetable Integration
Today's lesson offered a moment to pause and reflect, a practice I value greatly. It provided an opportunity to assess my efforts towards incorporating more vegetables into my diet, the challenges encountered, and plans for ongoing improvement. I appreciate how the program prompts me to track things like this, not every day, but in a way that is not overwhelming while still keeping me accountable to myself.

I like how the program focuses on adding things to our meals and not taking things away. The more you add, the less you have room for the things that might not be the best choices. This consistent inclusion has become a cornerstone of my nutritional practice, ensuring that every meal is an opportunity to nourish my body with essential nutrients.

The resistance from my immediate family to the changes in our shared dinners has been a significant challenge when I bring up things I want to try. Their reluctance to embrace new options when highlight the difficulty of changing established eating habits for everyone. However, I've found success in making cut vegetables readily available at dinner, subtly encouraging healthier snacking. I did try a new option of using chickpea pasta as a side dish for our chicken parm and everyone tried it, so that's a positive start. It seemed to break down a lot more than our regular whole grain pasta but I am not 100% sure if I overcooked it or not. I used half the box so will try again and cook it for less time next go round.

To further support my goal of eating more vegetables, I've increased our food deliveries to three times a week, ensuring a steady supply of fresh produce. Continuously prepping vegetables for easy access has reintegrated into our routine, a habit that simplifies healthy snacking and meal preparation.
